Crispy Coconut Shrimp

Ingredients:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup dry white wine or chicken broth
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley
  • 8 oz (225g) linguine or spaghetti, cooked according to package instructions

Instructions:

  3. Add the shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque.
  4. Pour in the white wine or chicken broth, lemon juice, and lemon zest. Cook for an additional 1-2 minutes to allow the flavors to meld.
  5. Season with salt and black pepper to taste.
  6. Remove the skillet from heat and stir in the chopped parsley.
  7. Serve the shrimp scampi over cooked linguine or spaghetti.
  8. Garnish with additional parsley and lemon slices if desired.
