Calabasa soup


  • 1 medium-sized calabasa (squash), peeled and diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 cups vegetable or chicken broth
  • 1 cup coconut milk
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste


  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, and sauté until fragrant and translucent.
  2. Add the diced calabasa (squash) to the pot and cook for about 5 minutes, stirring occasionally.
  3. Pour in the vegetable or chicken broth, and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the calabasa is tender.
  4. Using an immersion blender or a regular blender, puree the soup until smooth and creamy.
  5. Stir in the coconut milk, ground cumin, ground turmeric, salt, and pepper. Cook for an additional 5 minutes to allow the flavors to meld together.
  6. Taste the soup and adjust the seasonings according to your preference.
  7. Serve the Calabasa Soup hot, garnished with a drizzle of coconut milk and a sprinkle of ground black pepper.
