Sizzling Vegetable Fajitas


  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Optional toppings: shredded cheese, sour cream, salsa, guacamole


  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced bell peppers and onion to the skillet and sauté until they are tender-crisp, about 5-6 minutes.
  3. In a small bowl, mix together the chili powder, cumin, paprika, garlic powder, salt, and pepper.
  4. Sprinkle the spice mixture over the vegetables and toss to coat evenly.
  5. Continue cooking for another 2-3 minutes until the vegetables are sizzling and well-seasoned.
  6. Warm the flour tortillas in a separate pan or microwave.
  7. Serve the sizzling vegetable fajitas on warm tortillas with optional toppings of your choice.
